Veg: Avocado gazpacho

This is one of the easiest recipes out there especially when you have a friend over and you don’t want to spend time cooking instead of yakking but you also want to serve something healthy. The most important thing for this recipe is the blender. I have a Magic Bullet but you can use anything you have.

Ingredients:

  • 1 avocado
  • 200ml skimmed yoghurt
  • ½ cucumber
  • 2 spring onions
  • 5-6 cherry tomatoes
  • mint leaves
  • optional ingredients: chilli powder or smoked paprika, lemon juice or apple cider vinegar or raspberries vinegar, basil or coriander, jalopeno
  • 1 Tbsp good quality (Spanish) olive oil
  • salt & pepper

Cooking time:  5 mins

Preparation: Not much just clean the vegetables, chop them in chunks peel and deseed the cucumber.

Cooking:

Just put everything in a blender and set it on for 1 minute. Can’t be easier than this.

I have given you some optional ingredients for you to add to the basic ones. Try different combinations.
