Fish: Spicy avocado soup with shrimps

As everybody knows, I love avocado and soups, but the most I love spicy soups. This  definitely is worth to try if you need something refreshing.

Ingredients:

  • 150g shrimps
  • 1 red onion
  • 4 cloves of garlic
  • 1 red chili (I actually like to put 2 chilies to make it spicier)
  • 1 lime
  • 4 avocados
  • 1 liter of veggies broth (I buy it in jars from the organic supermarket)
  • 200g creme fraiche or skimmed yogurt (I prefer the latter)
  • salt & pepper
  • smoked paprika powder
  • optional: fresh parsley leaves, brown bread

Cooking time: 5 mins to prepare you ingredients and 25 mins to cook the soup and the shrimps

Preparation:  Chop the red onion, deseed and chop the chilies, peel off the garlic and chop it finely.

Cooking:

In a preheated wok add the olive oil and the paprika. Add the shrimps and half of the garlic, cook for a few minutes till they are done. You can also add salt and pepper, but I prefer to keep the salt under control. Set aside, we will use them for garnishing.

Fry until they are golden the onions and the garlic in a pot with a volume of minimum 2 liters. Add the chopped chilies and fry for 2 mins. Add the broth and bring the whole mixture to a boil (it will take around 5-7 mins). While the liquid is warming up, peel off and cut in big chunks the avocados. Once the soup is boiling take it off the heat, that’s it no more cooking. Add the avocados to the liquid, the lime rind, the lime juice and the creme fraiche or yogurt. Blend it all with a hand mixer. Season as per your own taste and serve the soup together with the shrimps.
