Simply eating


Veg: Avocado, goat feta cheese toast sandwich

As most of my friends know, sandwiches are not my favorite things, but they are my preferred option for Sunday brunch after a long Saturday night of partying,  so here we go, a very simple one for all you vegetarian party animals out there.

Avocado & goat feta cheese sandwich

 

 

Ingredients:

  • half avocado (you can use other half to make a quick guacamole for later)
  • 1 spring onion
  • 30g of feta cheese (if you don’t eat cheese, you can replace it with lettuce)
  • balsamic vinegar and olive oil
  • 1 slice of bread (you can use the gluten free bread as well)
  • salt & pepper

Cooking time:  2 min preparation, to peel off the avocado and chop the onion, 5 mins max to cook

Preparation: Not much preparation but still you need to chop the onion and peel off the avocado (I prefer to cut it in squares, it makes the removal of the skin much easier).

Cooking:

Toast the bread and once it’s done put a bit of olive oil on it. Slice the avocado quarters and place them on the bread and try to cover most of the surface. Crumble the feta cheese on top and put the chopped spring onion on top. Drizzle a bit of the balsamic vinegar, depending on your text.

Enjoy this alternative to the regular “dutch cheese sandwiches” 🙂
