Fish: Octupus warm salad

This is another quick and simple salad dinner for any day of the week when you don’t have much time to spend in the kitchen after a busy day at work, or you just want to chill outside and enjoy the sun.

Ingredients:

  • 1 octopus tentacle (I buy mine from a Japanese store at Gelderlandplein)
  • 3 potatoes, medium size
  • 2 spring onions
  • 1 lemon
  • 2 vine tomatoes
  • salt & pepper
  • optional: fresh parsley leaves

Cooking time: 20 mins to boil the potatoes and prepare the ingredients

Preparation: I prefer to do my potatoes in the microwave, because it is much faster so that should take you about 5 mins depending on how big they are. The octopus I also suggest to warm up 45 seconds (850W) in the microwave.

Cooking:

Once all the ingredients are warm, just cut them in small pieces and mix with the pieces of onion, tomatoes and make a small dressing with the lemon juice+olive oil+salt+pepper.
