Sweet: Simple chocolate cake

This recipe is another family recipe that I learnt from my mom. The base is a simple sponge cake and the chocolate cream is one made in bain-marie, not very complicated, a bit time consuming, but the result is just so yummy.

Ingredients for 4 portions:

  • 3 eggs for the sponge, 3 eggs for the chocolate cream
  • 3 tbsp of white flour
  • 3 tbsp sugar(sponge)+6 tbsp sugar (chocolate cream)
  • 150g butter (salted or unsalted)
  • 4 tablespoons cocoa powder
  • rum essence
  • baking paper (not kitchen towels)
  • forest fruits syrup/squash

Cooking time: 10 mins to prepare the sponge, 40 mins to bake and make the chocolate cream, 10-20 mins to assemble the cake.

Preparation: Arrange the baking paper in the tin, for 3 eggs you need a 15cm diameter baking tin. Use some butter or margarine to keep the paper still. Put the water for the bain marie to boil in the pan.

Sponge

Whisk the egg whites till they are very hard, add the egg yolks and continue to beat the mixture for 30 seconds, add 3 tablespoons of sugar and mix well. The last ingredient that goes in are the 3 tablespoons of flour. Incorporate them slowly, but make sure it is homogeneous.

Chocolate cream

Place the other 3 eggs and the 6 sugar tablespoons in the bowl that goes on top of the water pan for the bain marie and mix very well. Put the bowl on top of the pan with the boiling water and keep on whisking every 30 seconds until it starts to get thicker and thicker (you are looking for the consistency of a custard). It should take about 30 mins if you do it on a medium heat. Once this is done put on the side and add the cocoa powder and the butter. Mix well till the whole butter has melted. Place in the fridge for about 10 mins.

Assembling the cake

Once the sponge has cooled down, dilute the syrup with a bit of water just so that you can make the layers of the cake a bit moist for the cream to set. Cut the cake in 2 or 3 layers, depending how thick you like a layer and put the syrup on each one. Place the cream on top and just layer one after another. Decorate with whatever you have, I had some pearls and some kitties.
