Duck: Fast and simple fried liver

Whenever I am asked what my food heaven is my instant reply is: “duck liver”. It tastes like nothing else and the combination with figs jam is a match made in paradise. It is a very fast dish and can be done as a starter for parties as well.

Fast and simple foie gras


  • 100g duck liver/person
  • 2/3 tbsp of figs jam (the jar with last in your fridge for months)
  • a handful of coulourful salad leaves
  • salt, pepper, balsamic vinegar and olive oil for the salad dressing.

Cooking time: 10 mins

Preparation: If your duck liver came as a big piece, then I recommend you to cut it to be about 7-8 cm long, 2-3 cm wide and 1.5 cm thick.


The best way to cook this is to use a non stick pan without any oil. Just heat up the pan for 1-2 mins and put the liver there. Fry on each side for 2-3 mins.

The duck liver goes very well with salad leaves and the figs jam. It is quite a sweet, sour, salty combo. So while the meat is frying please prepare a quick and simple salad with the leaves.

Once cooked, rest the liver for 1-2 mins on kitchen paper and serve on a plate decorated with the jam.
