Veg: Gorgonzola, courgette and lemon penne

Simple and quick working woman/man food.

Gorgonzola, courgette and lemon penne

Ingredients (for 2 portions):

  • half of a medium courgette
  • 100g penne
  • 60g gorgonzola cheese
  • 1 lemon (lemon zest and lemon juice)
  • 2tbsp cream
  • 1 medium size red onion
  • 2 tbsp olive oil
  • salt and pepper
  • 1 kettle
  • optional: white wine

Cooking time:  1 min for preparation, 10 minutes for cooking

Preparation: First thing you need to do is to put the water to boil in the kettle. I prefer to quickly peel the courgette in strips especially because it will fry faster (don’t do the core with the seeds, only the exterior). Rasp the lemon and squeeze the juice from half of it.

Cooking:

Once the water is boiling poor into a pot with salt. Add the pasta to the water and boil for about 7 minutes. Meanwhile let’s prepare the rest. In a large frying pan add the olive oil and cook the courgette strips for about 4 minutes. Add the lemon juice, the cream, the lemon zest, the Gorgonzola and pepper. Cook for 1-2 minutes on low heat. About now the pasta should be done so add it to the pan and mix.

As an alternative to lemon juice you can use white wine. Also you can use gluten free penne.

Serve hot.
