Veg: Carrots goat cheese salad

This might look like a very long to cook salad, but I can assure you, it is well worth doing it, especially for a party (quite pretty colours).

Carrots goat cheese salad

Ingredients:

  • 100g crumbly goat cheese
  • 1 can of chick peas
  • 6 carrots (I have bought 3 purple and 3 yellow ones, butt you can go for classic orange ones)
  • 1 orange
  • 1 pomegranate
  • fresh oregano
  • 1 tbsp cumin seeds
  • salt, pepper, olive oil

Cooking time: 10 mins to prepare the veggies and fruits, 75 mins from beginning to the end, but there is not  much effort involved, so don’t let the duration put you off.

Preparation: Peel and cut the carrots in small round pieces. Remove the pomegranate seeds from the shell. Rasp the orange and and squeeze the juice out (be careful not to start doing the juice first, because then it will be harder to grade).

Cooking:

Pre heat the oven at 200C.  Do this before you start playing with the carrots, this can help you gain some cooking time. Mix the carrots with the cumin seeds, orange zest and the olive oil and place in a tray that will go in the oven for 30-40 mins depending on how big you sliced the carrots. After the carrots look to be almost ready, open the can of chick peas, drain the water and add them to the tray in the oven for 5 minutes. After remove take the veggies out and add the orange juice.

And now it’s time to assemble the salad. I recommend you to use a flat plate. Add all your warm veggies there, crumble the goat cheese on top, the pomegranate seeds and add the oregano leaves.

Drizzle a touch of olive oil all over, to give it a bit of a shine and enjoy!
