Veg: Sweet potato spinach soup

This is a simple and healthy soup for a cold autumn evening or even a rainy weekend.

Sweet potato spinach soup


  • 150g spinach leaves
  • 1 medium size sweet potato
  • 600 ml vegetables broth
  • 1 medium size onion
  • 2 cloves of garlic
  • 100ml single cream
  • 1 knob of butter and 2 table spoons of olive oil
  • salt & pepper
  • hand mixer
  • optional: 2 eggs that will be poached.

Cooking time: 10 mins to prepare mins the veggies, 15 mins to cook

Preparation: Not much preparation but still you need to chop the onion and the garlic. The sweet potato  must be peeled and sliced in 1.5cm cubes (the smaller you make the cubes the sooner the soup will cook). If you don’t have liquit bouillon (broth) then you can prepare now from a soup cube by disolving it in warm water (still 600ml),


Fry the onions and garlic until golden brown (about 2 minutes) then add the potatoes for a few seconds and then add the liquid broth. Let it boil until the potatoes are soft (but not too soft :)) Add the spinach for about 30 seconds and season it with salt and pepper. put the liquid aside and mix it until nice and smooth. Add the single cream and give one more stir.

I like my soups served with a poached egg in the middle, so this photo was no exception, just that the the phone rang and I left it 1 minute extra in the water (don’t do this at home)
