Chicken: Spit roast, broccoli couscous, steamed broccoli and garlic sauce

There is nothing that I love more on  a Sunday afternoon, than to do a chicken spit roast. Not to mention that I can use the leftovers all week for salads, sandwiches…

Spit roast, broccoli couscous, steamed broccoli and garlic sauce

Ingredients:

  • 1 medium size chicken
  • 1 sachet of spices + sun flower oil
  • 50g couscous
  • 1 medium size broccoli
  • garlic + olive oil
  • salt+pepper

Cooking time: 80 mins depending on the size of the kitchen

Preparation: Wash the broccoli and prepare the “diamonds” by cutting to rounded ends of the broccoli. I don’t mind steaming the broccoli without the ends later, even though it does not look too attractive, but if you are eating with your eyes, then you can make also broccoli soup and nobody will know what you did to the poor veggies 😉

Cooking:

There are a few tricks of a good spit roast: the chicken must be at room temperature before you put it in the oven and the chicken can be marinated for at least 20 mins with the mixture of spices that you previously fried for 2-3 mins in a bit of oil.

Once the bird has been marinated you can put it in the oven and turn the spit roasting function on. I prefer to leave the oven door completely open and keep the temperature at 100C. The slow roasting will make the meat juicier and the bird won’t be burnt. A medium size chicken of 1.2kg takes about 70 mins.

30 mins before the chicken is done, you should make the couscous. Just boil some hot water, add it to the  bowl with the couscous (the water should be cover the grains and about 1 cm more) and cover the bowl for 20 mins. After the time has expired, lift the lid and mix. Add the broccoli diamonds and a bit of pepper. Mix well.

To make the garlic sauce  (mujdei in Romanian) crush the garlic and mix it well with olive oil and salt. I prefer to add a bit of cream in order to soften the garlic.

When the chicken roast is done (the legs come off easily) you can let the meat rest and just steam your broccoli in the microwave for 3-4 minutes depending on how big they are.

Serve all of the above together.
