Pork: Japanese potato salad

I was taught this recipe by a Spanish friend of mine, married to a lovely Japanese man. She told me that this is one of the most popular family recipes in Japan. It is definitely one of mine.

Japanese potato salad


  • 6 medium potatoes
  • 1 carrot (optional)
  • 12 strips of bacon
  • 1/2 seedless cucumber
  • 1 shallot
  • 1 tbsp of rice vinegar
  • Japanese mayo

Cooking time: 30 mins to boil and prepare the salad.

Preparation: Boil the potatoes and the carrot in their skin.


While the veggies are boiling, fry the bacon and remove the extra grease  with kitchen paper. Slice the bacon in small stripes. Once the veggies have cooled down, cut them in cubes as small as you like (I prefer them quite chunky), add the chopped onion, and cubed cucumber (don’t forget to remove the seeds, because they contain too much water). Add one table spoon of rice vinegar and the Japanese mayo (if you cannot find one, then use regular one, but not too fatty).
